History of Calabash Chicken
In the late 1970's Gerald Brannon happened across a small chicken processor who marinated chicken breasts. The breast were trimmed to a certain size and the excess was discarded for hardly nothing.
Being a successful restaurateur for many years, Gerald knew a good thing when he saw it. His idea was to sell lunch specials using these strips. He knew the meat was top quality chicken breast so he developed his "now famous" formula and he called it "Calabash Chicken". As they say in the movies..... the rest is history!
Many other places now sell "Calabash Chicken" but to our knowledge we were the first to sell it and call it by that name.
